At last year’s Good Table Hank Adaniya of Hank’s Haute Dogs did a spectacular display of groundbreaking dishes from his renowned history back in Chicago. Check out last year's extraordinaroy display here. This year he returns with rising star Chef Chris Kajioka to present yet another extension of culinary vision. The theme will be focused on EXPERIENTIAL dining. Flavors, composition, texture and technique will be orchestrated in way to evoke a human experience, emotions emanating by way of the palate. Hank, mostly known as Henry on the mainland, is a man who gave rise to some of the countries if not worlds greatest chefs. His restaurant Trio showcased their culinary art and at its height, was recognized as one of Mobil Guides 5-star restaurants, one of only 13 in all of North America 2004. With a reputation of mentoring true talent, Hank considers Chris Kajioka as one of our own local talents to watch. “A gifted young chef with a character profile destined for greatness. He selected his culinary path well and chose monumental teachers (Roy Yamauchi, Thomas Keller) who mentored him in the disciplines of cooking. His vision astutely expresses true passion.” says Henry. So in this special evening of The Good Table, hank’s haute dogs will present a unique event of culinary magic. With eight tasting courses (most likely augmented with a few additional surprises), the evening will take an adventuresome look into the possible future of island cuisine. The unconventional setting of hank’s haute dogs will be transformed into a setting that is fast becoming a new format for prominent chefs that “play” informally with serious food. Eight seats at the counter will be available in bidding lots of four pairs of diners - this could change to lots of four or one party of eight. So what are we looking at here? Rare seats, a great institution to support, both something from the heart of greatness.
