Owners Wes Zane and Chef Alfredo ‘Almar’ Arcano bring over 50 years of culinary expertise to the table at Formaggio.  Their long-standing collaboration began at Hy's Steakhouse in Waikiki where Zane was VP of Operations and General Manager, and Arcano oversaw all kitchen operations as Executive Chef.  Over two decades, the pair has won numerous consecutive annual awards including Hale ‘Aina, Ilima, Wine Spectator and consistently high ratings in the Zagat guide.
